Finca el alto is a high-altitude farm with a commitment to quality, sustainability, and environmental protection, producing high quality coffee. As the name suggests it is one of the higher farms in the area and measures around 35 hectares in size. The farm is owned and run by Ludwin Daniel Aguilar and as president of Cocafelol, Ludwin keeps the farm in good shape. Informative signs and outreach education help farm workers and visitors to know what they must do to keep the farm ordered and clean.

Around 20 people work year-round on the property, expanding for the harvest period when a team of around 60 pick the coffee by hand. Constant Investments are made in infrastructure including a new warehouse and drying facility which were completed early in 2023. New fermentation tanks have also been built where the coffee is fermented, before being taken to patios for drying. This helps maintain both quality and pricing for coffee from the farm.

Parchment coffee is delivered to the cooperative, for final milling and exporting. There is some pressure within cooperatives to deliver cherry for ease of quality control, but well processed parchment coffee will always get abetter price.

Sub products generated from the coffee milling process such as the mucilage and pulp are treated and processed for use as nutrient rich foliar sprays and organic fertilisers. This assures the best environment for growing high-quality coffee as well as protecting local fauna.

Swiss Water receive the coffee in Vancouver, and extract the caffeine using just water to retain the natural flavours.

All of this together has resulted in a simply delicious and super clean decaf coffee which we are really excited to share with you.
